could be multiple things

are you loosing coolant?
is there air in your cooling system?

hows the condition of your rad?
is the rad fan kicking on?

if you turn on the defrost when truck is up to temp is it hot air coming out of the defrost vents?

Any milky residue on the inside of the oil cap?
how does the engine oil look? normal? or chocolate milk creamy looking?

Garage
Is the clutch fan working? Maybe the A/C compressor seizing? Are you running straight anti-freeze or pre-mixed?

the thermostat isn't in backwards is it? Also check your upper rad hose to make sure it's not collapsing under load

could be a air lock in system, check for coolant leaks and go to a shop that has a "air lift"coolant refiller

a moments silence for the shelbyx,i hope her new owner enjoys as much.
